A year in France was the beginning of a career and life filled with the joys of eating, drinking and cooking.
Tonia’s love of food began while studying in France’s Loire Valley. A year of exquisite French cuisine inspired her to enrol in the Culinary Arts; after an impressive period at some well-regarded restaurants she was offered the position of Head Chef at the Canadian Embassy in Rome. A spontaneous departure lead to four years of incredible culinary memories, one being a gala dinner for the Queen of England. Much time was also spent visiting Europe’s famous wine regions; a great supplement to her studies towards certification with the Italian Sommelier Guild.
Tonia held the same position a few years later, this time in the land of beer, Belgium. Here she gained a passionate interest for beer and brewing. Her desire to know more about the complex beverage lead her to a more structured form of learning and she has since been certified as a Prud’homme® Beer Sommelier. Tonia currently writes for the LCBO’s Food & Drink and VIVA magazine, she regularly speaks and leads tastings for both private and corporate groups. She has been seen on the Food Network, CBC and City TV, as well as the Gambero Rosso Network in Italy. She keeps her pots on the fire with private and corporate catering, and of course making dinner for her husband and two children.
